They're a mouthful, but they're worth it.
Let's discuss snacking. Ever since I came back from Vegas, I've been stressed to no end. Like anyone who is stressed out does, I immediately reach for the greasiest, most unhealthy things I can find. Last weekend I bought a box of frozen mozzarella sticks - you can see how bad it's gotten. But, for the last few days, I've been eating great. Even Thanksgiving was a pretty healthy (minus dessert...) venture for me. Of course, when work starts again on Monday, I need something to snack on so that I don't dive into the vending machine.
That brings me to these. They're delicious, moist (uh, sorry), and they're actually pretty healthy - the coconut flour gives them a really great texture. The banana makes them sweet, so feel free to leave out the chocolate if you want to be lame. I used my favorite protein powder (ProtiZyme Peanut Butter Cookie), which is super thick and is the best thing to bake with. I assume that the recipe will turn out the same with other powders, but for flavor purposes you're better off using a peanut butter flavor.
Ingredients (yields 11 cupcake sized "muffins)
3 ripe bananas, mashed up
1 teaspoon vanilla extract
1/3 cup peanut butter
1/2 cup coconut flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 scoop of peanut butter protein powder
1/4 cup (or more) of your favorite chocolate chips
