Happy 2017 (in a few hours)! I'm looking forward to a fresh start with a fresh year. Now that I'm officially homeless (I'm living with my mom for 2 weeks before driving up to New York), it's just a long wait till I start things anew. I have so many things planned for this year, and I'm really itching to get started.
In the meantime, we have a party to get to! My friend Nick is hosting a New Year's Eve party tonight. I couldn't go without bringing something (let this be a lesson to all of you - contribute something when you aren't hosting!), so I decided some festive cupcakes were in order.
These cupcakes are super easy to make. They're filled with Nutella buttercream, topped with dyed Nutella buttercream, and sprinkled with festive sprinkles. It only took me about 2 hours total, so if you're still rushing to find something to bring to your parties tonight, try these!
Ingredients (Makes about 18 cupcakes)
Start off by preparing your cake batter and making cupcakes. If you want to use a scratch chocolate cake mix, go for it. I'm just lazy (it's not the new year yet), and all of my baking supplies are packed up. Let the cupcakes cool while you prep your filling/frosting.
Put your softened butter into a separate bowl. Add the Nutella, powdered sugar, and cream. Leave the food coloring to the side for now.
When it comes to making your buttercream, you want to play it by ear. You may need to add more sugar or cream to make the consistency right. If it's too runny, it will make a mess inside the cupcake. If it's too thick, you won't be able to pipe it onto the cupcake.
Filling the cupcakes is super easy as well. They sell cupcake corers, but I just use a sharp knife to cut a chunk out. Add about a tablespoon of the buttercream to the center of each cupcake.
Once you're done filling, put the top back onto each cupcake. You'll want to cut a piece of the top off so that it makes a little "hat" for the cupcake.
Add the food coloring to the remaining buttercream, plus a little more powdered sugar to keep the frosting from going flat. Pipe the frosting onto each cupcake, and then top with any sprinkles. If your party is having a specific color theme, use those kinds of sprinkles! I found the glitter ones at Home Goods, and the white pearls are from Michael's.
